The next few posts I plan to share with you some of my traditional holiday treats that I bake every year. These great inexpensive treats are good for gift giving or great to have out for a holiday party. They look intimidating for newbie’s but trust me they are simple recipes that are super easy to master and a great way to spread the holiday spirit. These are not super healthy delights but they are festive and only come around once a year.
Peanut Butter Balls
½ Cup peanut butter (I used Smuckers all natural creamy)
1 Cup confectionary sugar
3 T butter
Coating:
1 bag semi-sweet chocolate chips
1 ½ T Crisco (you can use wax here, I prefer this method but did not have any on hand)
Combine first three ingredients until well blended.
Shape into small balls. I used 1 teaspoon of dough.
Freeze until you are ready to dip in chocolate coating. I usually freeze for 1 hour.
To make coating: Put Chocolate and wax in a double boiler, stirring regularly until chocolate is smooth.
With toothpick insert into peanut butter ball and dip until complete covered in the chocolate. Swirl around to get off excess chocolate.
Place chocolate covered peanut butter on a wax paper covered cookie sheet.
When complete place in freezer.
