Friday Eats: Stew

Yum! My lunch was Awesome, thanks to Jonathans mom!, she made a huge batch of Vegetable-Beef Stew earlier this week and had a ton left-over.  Lucky for moi!! It was soo good probably the best batch of stew I’ve had in a VERY long time!! Perfectly seasoned with not too much meat!!! 🙂 Just the way I love it!  HA-if ya all can’t tell I LOVE soups/stews and oatmeal!! I could pretty much spend the rest of my life eating oatmeal and soup for every meal!! 🙂

I also had a serving of my favorite chip ever……Garden Salsa SunChips!! I’m not really a chip person but I love SunChips.

To Drink I treated myself to a FUZE Slenderize Tangerine Grapefruit drink!!! 🙂 YUM!!! I’m really a water, coffee, tea kind of person but every once in awhile I will get the Fuze Slenderize~ they are pretty tasty!!

For Snack today I packed an apple and a Cashew Cookie Lara Bar (the best kind….Although I’m dying to try the coconut kinds mmmmm they sound so good)

I hope you all are having a beautiful FRIDAY!! It is so amazingly beautiful out today!!  I wish I was outside instead of sittin in the cubicle all day   I have a feeling whom ever invented the cubicle is really not a kind person!!  HMF!

I *heart* salad

Lunch was so simple and good today 🙂 It wasn’t what I was craving (warm soup obviously) but it was really good none-the-less especially accompanied with my lovely honeywell utility heater 🙂

I had the juiciest/sweetest orange, goldfish pretzel crackers, romaine lettuce, left-over salmon and a sprinkle of parm with basalmic vinegar!! So good!  I only ended up eating 3/4 for the salad and goldfish.

Later on this afternoon I’m sure I’ll have my Kashi bar and the other 1/2 of my orange.  🙂

Friday Eats: Lunch

Gosh this Friday is going by so SLOWLY!! I can’t wait for the weekend

I wasn’t too hungry for lunch but decided I better go out while I had the chance.  I got a gift card for Mcalister’s Deli from the company I work for Christmas and decided to use that for lunch today! I ordered from the ‘Cafe Menu’ and got the Turkey sandwhich sans mayo and the veggie chili!  The chili is sooooo good practically the only reason I would go back!!  I’m not a huge fan of lunch meats but if they are high quality and sliced thin I will eat them.  This sandwhich was great because it was just the right size and didn’t have too much turkey on it.

Would I ever go back to Mcalisters? I’m sure I will but honestly it is a pretty pricey place for just a small sub and cup of chili.  I would like to go back and try their salads or veggie sub sometime.  Overall my lunch was pretty similating for the taste buds 🙂

I’m off to enjoy a nice warm cup of tea for life tea!

Under the weather

I’ve come down with a terrible cold! BLAHHH!!  Sneezing, coughing, tired and achy!! 😦 The last thing I feel like doing is cooking!  I was in the mood for soup but didn’t have the energy to make a big pot of it.  I remembered I had this quick recipe that the boyfriends mother gave me.  This creamy potato soup is so warm and nourishing when you just feel like cr*p! It felt so good on my throat! I have changed the ingredients quite a bit from the original recipe but it is still sooo good!!   Just what the doctor ordered on this windy cold day!! 🙂

Creamy Potato Soup

2 Servings of instant potatoes (Bobs Red Mill Potatoes) (or 1 pkg of Idaho, I think that is the brand, instant potatoes)

1 Can cream of celery soup, reduced sodium

¼ onion (chopped)

½ carrot (shredded)

2 Cups broth (I used organic veggie broth)

1 Cup milk

1T butter

¼ t salt

¼ t pepper

½ Cup cheddar cheese (shredded)

Prepare instant potatoes as directed, I used veggie broth in place of water.  Sauté onion and Carrot in butter or olive oil. When potatoes are done stir in celery soup, onion and carrots, cheese. I added more broth and milk to the mixture, you can add as little or much as you like to obtain desired consistency. I like my soup to be extra brothy so I added a bit more veggie broth.  Add s+p to taste. Let simmer 15-20 min. Enjoy with a piece of crusty bread and warm tea. 🙂

Salmon Salad

 

When my boyfriend, Jonathan, finally got the recipe to his Memaws salmon cakes he was so excited…me……not so much.  It just seemed weird to me to be eating salmon out of a can.  I love fresh salmon but out of a can??….I was skeptical.  So he made these salmon cakes and they were pretty tasty..but then I got the bright idea to crumble it over my salad and add some balsamic vinegar!!!!  It was a complete makeover for both the salmon cake and salad!!!  It’s amazing how you can take two ordinary things and combine them to make something extraordinary!!!  (that line reminds me a Charlottes Web…BEST MOVIE EVER) 😉

Salmon Cakes:

Adapted from Memaw

2 Cans of boneless skinless salmon

2 pieces of whole wheat bread (torn into pieces or you could you bread crumbs about 3/4Cup)

1 egg

¼ cup parmesan cheese

Salt and pepper to taste

Pinch of garlic powder

Drain salmon. In a medium bowl mix all ingredients until well combined. Form mixture into small patties. Heat medium pan with cooking spray (or 1 teaspoon olive oil). Add patties to the pan and brown on each side. Make sure they are cooked through. I suggest having the pan on medium heat to ensure you cook the all the way through and not just brown them.
