We had this for dinner last night and it was absolutely delicious!! Although, Ava did not much care for it …claiming she “did not like shrimpsss!” Strange I could have sworn she ate a plate full of them at Christmas. hmmm…
These were simple and so good! They would have been even better with fresh basil I think and a splash of lemon juice but I didn’t have either on hand so dry basil it was.
Sorry for the weird blurry picture but I was famished and ready to dig into these beauties!
1 lb bag of Shrimp peeled and deveined
1/4 C good quality balsamic vinegar
1/8 C olive oil
2 cloves garlic minced
1 t dried basil (again you could use frest and just add more to suit your taste)
S+P to taste
Mix all ingredients (except the shrimp) well with a whisk. Add shimp. Stir until all are completely coated with the dressing. Allow to marinate in the refridgerator for at least 20min. (I marinated them for 30min) Spray a sauteing pan with cooking spray and set heat on med-high..*note: do not put on high! As you can see above I was in a hurry and put them in a piping hot pan and they were slightly burned. Jonathan didn’t think they were but I felt they would have been better cooked at a lower heat. Heat until they are cooked through and enjoy! 🙂
I served these shrimp over brown rice and green beans!! So good.
