I’ve come down with a terrible cold! BLAHHH!! Sneezing, coughing, tired and achy!! 😦 The last thing I feel like doing is cooking! I was in the mood for soup but didn’t have the energy to make a big pot of it. I remembered I had this quick recipe that the boyfriends mother gave me. This creamy potato soup is so warm and nourishing when you just feel like cr*p! It felt so good on my throat! I have changed the ingredients quite a bit from the original recipe but it is still sooo good!! Just what the doctor ordered on this windy cold day!! 🙂
Creamy Potato Soup
2 Servings of instant potatoes (Bobs Red Mill Potatoes) (or 1 pkg of Idaho, I think that is the brand, instant potatoes)
1 Can cream of celery soup, reduced sodium
¼ onion (chopped)
½ carrot (shredded)
2 Cups broth (I used organic veggie broth)
1 Cup milk
1T butter
¼ t salt
¼ t pepper
½ Cup cheddar cheese (shredded)
Prepare instant potatoes as directed, I used veggie broth in place of water. Sauté onion and Carrot in butter or olive oil. When potatoes are done stir in celery soup, onion and carrots, cheese. I added more broth and milk to the mixture, you can add as little or much as you like to obtain desired consistency. I like my soup to be extra brothy so I added a bit more veggie broth. Add s+p to taste. Let simmer 15-20 min. Enjoy with a piece of crusty bread and warm tea. 🙂
Sorry you’re sick. 😦 Look on the bright side, though: you could be sick AND be stuck in almost a foot of snow (in one day). Ha. That soup sounds interesting…never would have thought instant potatoes would be good in something like this. I hope you get feeling better.
