I’m not sure where I found this recipe it has been in my recipe binder for about 2 years now. It’s a reliable side dish that I can always count on my family eating. This is great with grilled chicken and roasted brussel sprouts!! The only thing left on Ava’s plate are the brussel sprouts….of course!! Why do brussel sprouts have such a bad rep??
1 T Butter
1 C Orzo
11/4 C Broth (I usually use organic veggie broth)
1 ¼ C Water
¼ C grated Parmesan cheese
2 T chopped basil
¼ t salt
¼ t pepper
Heat butter in a medium pan. Add orzo and cook 3 min stirring constantly. Stir in broth and water, bring to a boil. Reduce heat and simmer until liquid is absorbed (about 15 min). Remove from heat and add cheese, salt, pepper and basil. Enjoy!
This recipe is great to have for quick weeknight meals due to the simple common ingredients. If you don’t have basil substitute parsley. You can also you a pinch of dried herbs if you don’t have any fresh available.
Do any of you ever find it challenging to come up with new recipes that your whole family will eat? As a new mother this has been my biggest frustration. Everyone wants different things and I don’t want to get in the habit of making three dinners to suit everyone’s needs every night….life is too hectic for all that.
