There is nothing I love more than a cozy evening with a warm bowl of soup and hot tea. Tonight, I decided to make this amazing soup for dinner. When I realized I had a ton of veggies to use up and the next thing I knew I was chopping away and throwing all sort of vegetables in the pot!! This soup turned out well!!! It was a great end to the weekend!! I hope you all enjoy this is as much as I did.
1 bag of lentils (rinsed and picked through)
2 garlic cloves
2 celery ribs
1 small butternut squash (cubed)
3 Cups kale (or green of your choice)
1 (28 oz) can of crushed tomatoes
2 Cups broth (I used organic veggie broth)
Salt, pepper, garlic salt to taste
In a large soup pot heat 1 T of olive oil. Add onions. Sauté until translucent. Add garlic, butternut squash, carrots and celery. Cook 3-5 min. Add broth, tomatoes and enough water to cover the vegetables. Bring to a boil and add lentils. Simmer for 1-2 hours adding more water if needed. Add kale the last 2-3 minutes of cooking. Season to taste.
*This Does not take 1-2 hours to cook when your lentils are tender you can serve it, but I love having a warm pot of soup on the stove all afternoon it allows the flavors to really blend. This is great for leftover as well.
